Bruschetta with Roasted Garlic and Fresh Basil

Roasted garlic makes this bruschetta super yummy!

1 can petite diced tomatoes, or 4-6 roma tomatoes, chopped

5 cloves of roasted garlic, chopped

3/4 cup fresh basil, chopped (just grab a big bunch of basil and chop it up, you can’t go wrong!)

Fresh salt and pepper

One loaf of crusty Italian bread, sliced

Olive oil for drizzling

If using canned tomatoes, remove all the water by draining them in a colander for a minute or so. Place tomatoes in a medium sized bowl and stir in the roasted garlic, basil, and salt and pepper. Chill in the fridge while you prepare the bread. Lightly toast the slices in the oven and drizzle with olive oil. Top each slice with the tomato mixture and serve.

Serving Variation:

For a fancy appetizer, arrange bread on a platter with the tomatoes in a bowl and allow guests to spoon the topping onto their bread slices.
